Berry & Banana Breakfast Loaf
Ingredients:
- 3 X ripe bananas
- 300g oats
- 2 X eggs (or sub for an extra banana)
- 80ml olive oil (or melted butter)
- 200g Greek or soya yogurt
- 50g flaked almonds
- 50g mixed seeds
- 150g frozen berries
- 1 tsp bicarb of soda
Method:
- Pre-heat the oven to 160C fan and line a loaf tin with parchment paper.
- Mash the bananas in a bowl and whisk in the two eggs, or flax eggs if using.
- Add the yogurt and oil and stir until well combined.
- Fold in the oats and bicarb of soda until well incorporated.
- Spoon the mixture into a baking tin, holding back 1/3-1/4 of the mix separately.
- Add the flaked almonds and seeds (and whatever other toppings you might like) to the mix and set aside.
- Sprinkle the frozen berries evenly onto the tin, before then covering with the remaining mixture.
- Bake for 55 mins or until the top is golden and a knife inserted into it comes out dry.
- Serve warm or keep in the fridge to have as a snack or breakfast with yogurt [works well hot or cold].
